The Saint Louis estate boasts 625 olive trees of 42 different varieties, some of which are centuries old. They are planted in terraces around the bastide, benefiting from maximum sunlight exposure. Pruning is carried out every three years, allowing the olive trees to yield beautiful fruits, from which we produce a highly astringent and fruity oil. After the hand-harvesting in November, the 4.7 tons of olives are cold-pressed at the Gervasoni mill in Aups, resulting in high-quality extra-virgin olive oil.
